Our Story
Jade Bakery started as a weekend experiment in a home kitchen — a 72-hour sourdough that made strangers stop and ask what was different about it. The answer was simple: time.
Today we occupy a modest storefront at 6223 8th Avenue, where the same commitment holds. Every loaf is hand-shaped, every croissant laminated by hand, every batch fermented long enough to develop flavor that industrial ovens can't replicate. We serve the Fort Greene and Clinton Hill neighborhoods with something increasingly rare — food made the way it ought to be made.
Philosophy
We don't chase trends. We chase flavor, texture, and the kind of consistency that comes from doing the same thing right, every single day.

We ferment for days, not hours. Long cold retard develops complexity that no improver can mimic.
